How do I customise the background colour of the blockquotes? I was wondering how one goes about setting the tags for it in the stylesheet (styles-site.css or styles.css)?

If you go into the template screen inside of MT and click the Stylesheets template, you can add a line for how you want the blockquote to look. Something like this:
