If I have 5 categories, and I want to make the posts from one of those into a separate blog, how would I be able to do that.

Also, after moving them out to a separate blog, delete the original postings in the category?

Yes, once you've set up the posts in the new blog, you'll have to delete them from the old blog. You can do this more easily by using the filter option on the List and Edit Entries page to show only the posts from that category.

Rather than copying over the entries by hand, you can do an export of the entries in one category only using this trick.
