How may I post content to my MT blog using my mobile phone? Is it possible to post text, images and video from a mobile phone to a MT blog? May I determine to which category I would like to post content?

If I should use a plug-in, may you please make a recommendation. I would like to be able to continue moblogging once I upgrade to MT v3.2.

There are several options listed here. Depending on the capabilities of the option you chose you will be able to post different content.
